Blueberry Chocolate No Bake Cookies
½ cup Milk
7 Tablespoons Margarine or Butter
12oz. (about 1 ½ cups) Milk or Dark Chocolate Covered Blueberries
¼ cup Sugar (optional-more or less to taste)
3-4 Tablespoons Peanut Butter
½ teaspoon Vanilla Extract
3 Cups Quick Oatmeal or Rolled Oats
In a sauce pan combine milk, margarine, chocolate covered blueberries, and sugar (optional). Over low-medium heat, bring to a full boil, stirring occasionally. Boil for 1-2 minutes, stirring frequently.
Remove from heat. Add vanilla extract, peanut butter, and oats; stir well. Drop by spoonfulls onto waxed paper or parchment paper.
Makes approximately 25-30 2-inch cookies. Cool completely on counter or in refrigerator.
*Note: You can combine all ingredients in sauce pan and continue to boil a minute or so longer. This will make the oats less chewy and yield a cookie that is softer and easier to chew. However, the heat will cause the oil in the peanut butter to separate. If using this method, you will need to use less margarine and possibly more oats).
